SHEALTHY proposal aims to develop an optimal combination of non-thermal sanitization, preservation and stabilization methods to improve safety while preserving the nutritional and organoleptic quality.

SHEALTHY respond to consumers’ demand for fresh, healthy, convenient, sustainable and locally produced food. This holistic approach requires the implementation of novel logistic systems and novel bioactive compounds extracted from co-products and sub-products from fruits and vegetables.
